As of the census[2] of 2000, there were 2,521 people, 776 households, and 644 families residing in the CDP. The population density was 620.0/km² (1,604.1/mi²). There were 812 housing units at an average density of 199.7/km² (516.7/mi²). The racial makeup of the CDP was 64.02% White, 10.08% African American, 1.27% Native American, 2.22% Asian, 0.16% Pacific Islander, 16.03% from other races, and 6.23% from two or more races. Hispanic or Latino of any race were 34.43% of the population.
There were 776 households out of which 39.6% had children under the age of 18 living with them, 62.6% were married couples living together, 14.7% had a female householder with no husband present, and 17.0% were non-families. 13.8% of all households were made up of individuals and 4.6% had someone living alone who was 65 years of age or older. The average household size was 3.23 and the average family size was 3.50.
In the CDP the population was spread out with 31.3% under the age of 18, 8.8% from 18 to 24, 26.8% from 25 to 44, 24.0% from 45 to 64, and 9.1% who were 65 years of age or older. The median age was 35 years. For every 100 females there were 98.5 males. For every 100 females age 18 and over, there were 94.9 males.
The median income for a household in the CDP was $45,878, and the median income for a family was $52,792. Males had a median income of $36,568 versus $27,321 for females. The per capita income for the CDP was $16,247. About 2.7% of families and 7.0% of the population were below the poverty line, including 7.5% of those under age 18 and 7.8% of those age 65 or over.

In the state legislature Mountain View Acres is located in the 17th Senate District, represented by Republican George Runner, and in the 36th Assembly District, represented by Republican Sharon Runner. Federally, Mountain View Acres is located in California's 25th congressional district, which has a Cook PVI of R +7[3] and is represented by Republican Buck McKeon.
