Spirgai

Spirgai (also spirgučiai ("little spirgai"); from Lithuanian spirginti, "to fry with a frizzling sound") is a Lithuanian national garnish: small bits of fried lašiniai (non-rendered pork underskin fat with little or no meat, known in Russian and Ukrainian as salo). Spirgai is often used as a garnish for cepelinai and kugelis, popular Lithuanian national dishes.
