Saj (Arabic: صاج) has two meanings in the Oriental cuisine:
- the Lebanese name (also called "markouk") for a form of bread used mainly in Arabic cultures; it is commonly compared to a pita bread known in Mediterranean cuisine.
- the iron dome shaped 'pan' that is used to cook the aforementioned saj bread on. It is placed over a source of heat, traditionally a wood fire, and the dough is placed on it.
