P'tcha

P'tcha is a traditional Ashkenazi Jewish food, a jelly made out of calves' hooves or bones, or sometimes chicken feet or bones. P'tcha is still frequently served today in Hasidic communities.
It is sometimes called galla or gallaretta.
If properly prepared, P'tcha has very high amounts of protein and low amounts of fat and cholesterol.
