Luke Hayes Alexander

Luke Hayes-Alexander (b.1990), is a famed child prodige chef currently based at Luke's! Gastronomy in Kingston, Ontario. One of the youngest master charcutiers, Luke has been Chef at Luke's! Gastronomy since 2005. His parents founded the restaurant in 1993. Throughout the years 1997-2001, he expressed a deep interest in food and the running of a restaurant, often eager to help his parents. In 2002 he decided that he wanted to commit himself fully to the culinary world and, over the next 4 years, immersed himself in cookbooks and food history books, teaching himself everything he could, in addition to his parents teaching him everything they knew, as well.In 2005 he took over as executive Chef of Luke's! and, within two years, had established a solid reputation across Canada as a proponant of both Slow Food and modern food philosophies;as a rare master charcutier;and as one of the few Chefs' who believes in hand making everything he serves.During the last two years he has received a large amount of press in a number of esteemed Canadian publications including The Toronto Star,The Ottawa Citizen, and Foodservice and Hospitality magazine, among others.In July 2007 he was interviewed on CKWS T.V.,and in August was interviewed on the Canadian Broadcasting Centre radio program "Sounds Like Canada" as part of a child prodige series. Some of his many signature dishes are his Braise et Bourre la Tete de Cochon,his charcuterie,and his creative desserts, such as "Apple and Popcorn Ice Cream."
