Helzel

Helzel is a Jewish Ashkenazic dish. It is a sort of sausage or pudding made from kosher poultry skin, typically neck skin, stuffed with matzo meal, rendered fat (schmaltz) and spices and sewn up with edible thread.
It is similar to kishke, and is like kishke it is frequently used as an ingredient in cholent.
